Potato Soup Recipe with Mushrooms

This potato soup is creamy, delicious and combined with all healthy and natural ingredients including celery, coconut milk, and zucchini and sprinkled with sautéed garlic. The soup doesn’t include a lot of ingredients, so it is easy to prepare.

Ingredients for Potato Soup

  • Olive oil: 1 tbsp.
  • Onion: 1/2, diced
  • Potatoes: 4 medium
  • Celery: 1 cup, chopped
  • Zucchini: 1 cup, chopped
  • Water: 2 cup
  • Veggie stock: ½ tsp.
  • Coconut milk cream: ½ cup
  • Salt n pepper to taste

Ingredients for Sautéed Mushrooms, Kale and Garlic

  • Olive oil: 1 tbsp.
  • Kale: 1 cup, chopped
  • Garlic cloves: 2, chopped
  • Mushrooms: 4, sliced


Take a medium pan and heat oil for 2 minutes than add potatoes, onion, zucchini and celery. Sautee them for 5-7 minutes than add water, coconut cream and veggie stock. Let the mixture simmer for about 20- 25 minutes, until the potatoes are tender and soft. Now remove the mixture from heat and let it cool before you blend the mixture in blender for smoother texture.

Homemade Bacon Potato Soup

In another pan, heat olive oil, and pour kale, mushrooms and garlic for 3-4 minutes or until cooked properly. Pour the blended soup in soup bowl and serve with sautéed vegetables and salt n pepper on top.
